As is often pointed out, Hostals are an alternative. Basically they are like hotels but don't have a restaurant so meals have to be taken in cafe's and these are usually nearby as well as cheap.

Having done a bit of camping in Spain, there is an alternative to camping and hotels/hostals.
Most Spanish campsites have chalets that sleep four. All you need is your own bedding (sleeping bag).

It may be worth packing a sleeping bag even if you do not intend camping and trying campsites for chalets in the areas you intend stopping.
