I am planning to go to on a return trip to the Dolomites in 2010, so have been looking through John Herrmann's 'Bible of the Alps' and a few maps. I thought it might be handy if I posted up the routes.
Dolomites

(1) Figure of 8
Six major passes: di Valparola (2,192m), di Falzarego (2,105m), di Campolongo (1,875m), di Gardena (Grodner Joch) (2,121m), di Sella (2,244M) and Pordoi (2,2379m).
(2) Giau and Marmolada
Includes the Marmolada (Passo di Fedaia) (2,057m) and Passo di Giau (2,233m).
(3) 17 passes in one day!
Valparola, Falzarego, Giau, Staulanza, Duran, Aurine, Cereda, Rolle, Valles, San Pellegrino, Lavaze, Costalunga, Fedaia, Pordoi, Sella, Gardena, Campagolongo.
(4) Getting to Arabba and getting out again
In / out via:
Ilanz and St Moritz: Operalp Pass (2,044m), Julier Pass (2,284m). Then on to: Rovento, Passo di Vezzena (1,402m) and Passo di Sommo (1,343m) including the San Boldo switchback tunnels and Monte Grappa.
Out / in via:
Mittersill, Zell-am-Ziller and Munich. Achen Pass (941m), Zillertaler Hochenstrasse, Schlegels (1,784m), Gerlos Pass (1,507m), Konigsleiten, Pass Thurn (1,272m).
