Follow the river as far upstream as you can, as it's bendy, and then come back the same way. 
Was there twice a few years ago.
Lovely place.
Plenty of eating places and bars near the bridge.
Hundreds of bikes around on a Sunday that I was there.
Agree about the route North along the river.

South, ie towards and into France is better IMO.

Bouillon to Montherme is a very good road if I remember correctly.

Good luck. It's one of the busiest weekends of the year because today (Thursday 9/5) is a public holiday in Belgium and millions take off to the coast or the Ardennes. It's a nice area to ride , and today the weather is very nice but I wouldn't go there this weekend because it will be mobbed and the roads will be full of loonies .... sorry to rain on your parade but I hope you have a good time regardless.
