Selected this option in order to upload an attachment (i am sure there is a way to do it on the mobile version but this seemed quicker at the time). How do I move it back to the 'mobile' version on my phone? It's too tiny

Logout, close the browser on your phone (you could clear the history as well (belt & braces) and log back in, it'll give you the mobile version option again.
Select the Mobile option from the drop down menu at bottom left of page.
