I have made a fairly good start at routes around Italy, Corsica and Sardinia, with help from a Motocard Italy freeby map I must have picked up somewhere on my travels.

Tutto in Italiano but a map is a map, no matter what anyone says.

The website is quite useful as the individual routes 'Itinerari' have hotels and campsites marked, all in user friendly Google maps. Here's a sample for the foot and toe of Italy:

Whilst browsing in Waterstones for possible inspiration on routes around Spain, I chanced over this book:

OK, it's bicycles but cyclists more often than not favour similar roads to their powered cousins. It may have some useful ideas?

Sadly, Lonely Planet do not do a similar book for Spain, whilst their 'Hiking Spain' publication is a bit too 'rugged', if you get my drift.
 
Just one piece of advice - if you are in Corsica and you see a white van in the mirror, get the f*ck out of the way and let it past. They are mental !!
