Continental TKC 80, Dunlop K850A, or Michelin Sirac

front is 3.00x21 rear 4.00x18
which one of these or other tyres?

TKC 70's. Excellent tyre. I run them on my G/S in the same sizes. No need for any other tyre at this level/power output -way more tyre than the bike needs.

Avon Trailrider is even better (which I run on my Funduro) but not sure if you can get imp sizes as they are (as far as I know ) tubeless only.....
 
I’ve put a set of Sirac's on my G/S special... I’ve been very pleased with them as a road and light trail tyre

I like the TCK70s. I've had them on two of my bikes and will definitely replace them with the same, however for the XT you may try looking at the Enduro 1 and 2 (front and rear).

I really like the look of these and had them on my g/s for ages. They work really well too.

I too like the Metzeler enduro 1 and 2, and likewise used them for ever on my G/S (which as you know they were specifically designed for) however, as good as they are, TKC 70's and Avon Trailriders are massively better in every imaginable way - particularly on winter roads.

To be fair, I am going to put 70s on my G/S when the 80s have worn out. I do like the look of the Enduros. They look like a proper 1970/80s tyre.
