I took my 1200 to a local practice track some years ago, great fun, but very physically demanding. The bike flew straight and level if left to its own devices, I could lift or drop the front with the throttle, but any other adjustments were nigh on impossible!
The landings needed to be spot on though, because it came down like a block of flats.
The rider in that video looks to have the measure of the bike and the track, and I think he is matching the attitude of the bike to the angle of the ground he is aiming for.
