Do iPhone and iPad chargers stop charging once the battery is full, or do they just keep on charging? Or, putting it another way, will it harm the battery if I were to forget it and leave it on charge for a few days?

It will stop charging and keep topped off if you leave it plugged in. Same as the maintenance charger on your bike to put it another way.
