Does your unit have a 'trackback' function? My 60CsX does, and I found the best way to set a route for the day was by creating a tracklog in Mapsource, then uploading it to the unit. You can have far more points in a tracklog than a route, so you can accurately follow roads.

I used a netbook and spent an hour or so each evening plotting the next day's route - I enjoy that kinda thing!
 
I don't use mapsource, I usually plot my daily route by looking at a paper map, putting a town as a destination on the Zumo, and then putting in enough towns as viapoints to make sure that the Zumo takes the route that I want. Once I've selected the route on the paper map, this usually takes about two minutes.

This approach works fine in the US or Europe, not as well in Morocco. In Europe or the US, rides usually stay pretty interesting using this approach because if set to "shortest route" the GPS will generally route you onto very small, interesting, roads.
