Is it likely that iOS / iPad will ever be able to be used to program these units.

The Bluetooth app has been in the pipeline for a few years now, with a lot of hurdles delaying the development thereof. I don't have an ETA yet, but the implementation will be a Bluetooth module that connects to your ezCAN's ezBUS output (white) and that will connect with a mobile app.
Unfortunately, USB connection to a mobile device will most likely not be considered.
