I've been having a great deal of trouble 'finding' my Outlook .pst files in order to back them up.

I knew where to look, but because the files just say 'Outlook data file' for example with no indication of the file extension (like in good old Dos days) I was struggling to identify each file.

Even if you right click and then look at 'properties' it still gives no indication of whether a file is an .exe a .pst a .doc or whatever.

Is there anyway way to make XP show FULL filenames?

To show all file extensions in XP, go into My Computer or Windows Explorer and choose Tools|Folder Options. In the View tab, remove the checkmark next to Hide extensions for known file types and select "apply to all folders" tab

should do the trick - have a look at the other options in there you may find some usefull

Will,
Open up My Computer, go to Tools on the menu bar and folder options.
From the View tab take off the tick 'hide extensions for known file types' , i think you may also have to tick 'show hidden files' and take off the tick hiding 'protected operating system files'
