I was playing today - as you do in a traffic queue - when I noticed that it was impossible, on my bike at least, to open the throttle off idle to increase the revs just a snad ... mine jumps from idle to about 2300 rpm with no control from the twistgrip in between ...

Does yours do the same?

No, but mine's a 650, different power curve altogether than the 800GS, and it improved dramatically when I put in the accellerator module + iridium plugs. I can now slowly pull away with minimum revs, from say 1500r/m, and open the throttle gradually to gain speed, no complaints. It used to be quite jerky though, a nuisance at times when you need the fine control, as you say. May be your power commander kicking in??
Ordered K&N filter, when installed will have a dyno run done, will report back.
 
I can sometimes hold mine at 2k, but its a tiny amount of twist just enough to take up the throttle cable slack.
 
No probs here ... just treat the throttle like you was handling the G spot :eek:

I don't ride mine everyday, so couldn't try this out til last night.

No problems here. I tried it in stop start traffic, and I can easily dial up 1300 - 1400 revs when pulling away. Try mine when you do the 'Maintenance Day' and see if it's different to yours. I have noticed that you need to have a bit more slack in the throttle cable than bikes of old.
 
No problem here. Smooth throttle response from tick over on both 650 and 800.
There is a throttle glitch every now and then, when I hit a big bump sometimes I inadvertently yank the throttle open, sometimes I close off and the engine braking is enough to make me think the engine has died. It only takes a fraction of a twist to make a massive difference.
Another odd thing was in the Alps this year, I could not move the throttle at all, eventually after frantic twisting it loosened off but was very stiff and difficult to ride. After a few minutes it was back to normal. I had a good check at our camp and could not see anything wrong, a few thousand miles have past with no problem. I wondered if a tar soaked pebble from the many road works had jammed something and then fallen out. The bike was covered in small stone and tar spots.
It may be worth checking the throttle cable and linkage for obstructions, a frayed cable or other damage, its visible after removing the small cover below at your left knee as you sit on the bike.
 
I played about today and i found:

1. When in gear and riding along, i had reasonable throttle control between idle & 2k revs

2. When not in gear, the rev's jumped to >2k from idle
