Strapped everything I needed for a week in France to my 1150 & off I went two up no problem, gave loading & distribution some thought but didn't use a calculator, one thing the GS is good at is being a pack mule. I'm doing similar this year, my advice is have a basic plan, use common sense & just go for it.
 
It's also worth remembering the we engineers normally design things for a given job to a comprehensive design specification, and we always add a factor of safety into our load-bearing and stress/strain calculations, so a "max payload" may in some cases be exceeded by some margin since the bike was designed to carry that load perfectly safely: I agree - load it up and go (but don't try to ride like you're solo, and watch for frame-and-suspension-stress-inducing potholes).

Ive got a GS not adv.
Me (93kg) and my son (97kg) went our for a short spin other day.
The bike was totally overloaded, and the shaft was making some serious clunking noises. Suspension was set to hardest possible. (its a newish bike too).
Will never try it again!
