Whats wrong with the TKCs ? They're confidence inspiering on the 650 and the 1200.
You could try Hydenaus (don't quote me on the spelling) they are a bit more aggresive, but I recon unless your Wife is an off road Godess either will do just fine.
With respect, these are just my thoughts. You might be a very experianced off roader, but your wife might be a total novice. It might be prudent to only go where she will be happy in her adventure. In truth the 650 is a heavy bike off road 175 kilos dry and I'm sure you won't want to ruin any chances of further trips to the play ground by putting her confidence at risk.
I wish you both luck in your play. I know my other half is itching to get on to Salisbury plain on her 650 (I'm not so sure my back can take it though).

I think that depends on the conditions you're riding in.
IMO TKCs are not confidence inspiring in anything muddy, and the vague feeling of the standard 650 Dakar was a one of the reasons for not keeping it.
perhaps I should have persevered and fitted more aggressive tyres.
For anyone new to offroading a big trail bike I would suggest getting that front end as planted as possible, else it'll end in tears
I'm not happy on my Rallye bike 650 in mud even with MT21s, something like an AC10 is fine.
But back to Robs query, there doesn't seem to be much in the way of 19" fronts so perhaps use TKCs but stay on gravel and stoney tracks as much as possible until Emma builds some confidence... then let her loose
