Thanks fellas. Some great advice in there. I didn't have Peach Springs on the route, but I do now!!
It's good to hear that 250-300 mile days are quite do-able. We tend to be on the road at 9am sharp and ending the day around 6pm so that all sounds good, apart perhaps from Bilco saying rooms might not be easy to find in the evening. Normally we tend to book all the accommodation for a tour well in advance, but with this trip covering such a large area with so many potential diversions and distractions, I was considering just stopping wherever I find myself at 6pm. Maybe not such a great idea?
Unfortunately the trip has to coincide with the easter holidays for my riding partner, so it's going to be the first 2 weeks of April. We're aware that this isn't ideal weather-wise but we have to make the best of it. It sounds like I might be better off taking my full-face Shoei and Halvarssons textiles then rather than riding in kevlar jeans, leather jacket and open-face helmet?
Bilco, if it's OK with you, can I whizz you over a copy of my planned route for your comments? I know you know loads about touring the US so I'd be grateful for any "skip this bit, divert through this town, make sure you ride this highway north to south" type stuff, as well as perhaps padding out the route a bit to take advantage of the 12 days we'll have the bikes.

P.S. I'll have to re-read the Harley comments. I have a Fatboy, Electra Glide, Road King and Heritage Softail on offer. I used to have a Sportster and then a Street Bob, so I know what riding a Harley is like. I also know that I don't have one anymore.
What I'd really like is something that's not too cumbersome and handles nicely on the few twisties we'll encounter. I Sportster 1200 would have done me, but I think the luggage would be an issue. It also sounds like something with a screen is in order for early April!
