when fitting the mudsling thingy do you remove the standard plastic shock cover .

Nope. Slot'em together. At least you do on mine.

You don't have to but it won't do anything any more. I binned mine, the Mudsling does a very good job as you will see.

I removed mine easier to clean the shock without it

The original ones should be just long enough to re-use IIRC
