I think the answer to the 'north up / track up' question really depends on what you first became familiar with prior to using a GPSR - back in the days of paper maps.
Personally, I prefer north up, simply because I am used to that type of map presentation - I can maintain better spatial awareness with north up.
I will occasionally use 'track up' if I am riding a particularly twisty mountain road, because under those circumstances, I don't really care about my navigational orientation, I am more concerned about maintaining awareness of which direction my next turn (next curve in road) will be.
