Looking for some advise please. I'm rebuilding a 1981 G/S and the front calliper could do with a refresh. Has anyone any experience of repainting / refinishing a front calliper.

Yep
They take two-pack well, or if a rattle can I find a coat of etch prime and three of Smoothrite works really well.
Be very careful not to paint the mating faces, threaded holes or inside the piston bores.

Will the brake fluid just destroy normal paint
