Question about reworking a s/h bike with no log book and insurance

My dilema is that I have just bought a r100rs and wish to change the appearance of the bike to my spec.
The V5 was not found by the previous owner but my problem is if I use the V62 form to obtain the log book, will I have to insure the bike to make it legal so I can sorn it until the bike's on the road?

I sent for the logbook and didn't bother with sorn. Taxed the bike when I first rode, no issues at all.

In the end I just filled out the form and sent it off, just waiting now. They say its about two weeks till I hear anything.
Bike won't be ready this year so I may sorn it.
Does it require to insure it?

No just sorn it. Confusion arises in that you can't have a taxed bike and no insurance ( ie you bought it with current tax on it ). Must be sorned though
