Now here's the deal.

In the operators manual, it is stated that you should genly tap all the spokes on the wheels with a spanner, and listen to differences in tone, which should indicate that all spokes don't have the same tension.

Now, when I do that on my bike, most of them deviate.

But I can't feel anything riding it (on tourrances, plan to change to Conti Road Attacks when needed).

Is this a case of, 'ride more, worry less'? Or should the spokes be perfectly tensioned?

Just ride the thing, when the wheel collapses start worrying!

With the sound check you're listening for one that has a distinct 'thunk', indicating it's loose with no tension on it rather than a 'ring'.
You'll never get them to sound exactly the same:)
