It's apparent the problem I had with the pillion seat not locking is not uncommon, so I thought I'd post the fix that worked (for me) under a seperate thread so more GSer's would see it.
As Nige observed it appears the hook on the seat base may not be aligned with the latch. I could see it was coming down just behind the latch instead of in front (on the sloping face) where it should push the latch back.
It's possible to reach into this bit with the seat in position and pull the latch back a few mm, enough to let the hook sit on the front of the latch, after which the usual shove lets it locate properly.
