Don’t know whether you’re finding about the Motor Rail service is typical, looks like British Rail in the 70’s, perhaps others will chime in and comment.
As a rule of thumb, continental trains (outside of the really smart intercity runs) are often very basic.
For all its faults British Rail's (or whatever it's now called) are not so bad. The OP mentioned the Trans-Siberian express, I did that across Russia in the late 70's / early 80's....great fun. There are two classes on Russian trains, 2nd and 9th.... with nothing in between
