Buying one on sat, what tools do I need to bring with me to fit the adaptor plate.

Well it's posted in the WC section, there's the clue.
 
Luckily for me I can read and I'm aware what section it's in. I was trying to help.

You don't seen to realise BMW manufacture two different GS WC models as they have done since the 1150 range. They also make a different set of luggage for each model. As there are a number of aftermarket companies also making top boxes I would have thought that clarification of what you are buying and what you are fitting it to is a reasonable question.

I hope whatever you get you like it and it stays on but

If you are fitting the original Vario case on a regular GS you'll need only a Torx wrench or two (IIRC T30 and another smaller). You will need to take out six screws that fix the original piece to the bike, loosen a couple that hold the pillion handle under the seat, lift the whole thing, exchange the original support for the adaptor, and put the screws back on. Pretty straightforward, no other issues.

I don't have a clue about the GS Adventure. It uses a different kind of support.
