As she wanted (honest!), SWIMBO got a camcorder for Xmas. It's a digital jobbie, uses Mini DV tapes and has a DV-out (although I've yet to get a Firewire lead).

I want to be able to edit the crap that gets recorded and burn what remains onto a DVD.

What software do people recommend for this?

If you are using Windows XP, then you can try Windows movie maker. A similar basic program is loaded on Mac's.
It will let you join clips, make titles, add sound, etc.

Basically, for making DVD's you need 2 programs: One for trasnfering the raw material from the camcorder to the PC and then another to convert from AVI to MPEG (the format used on DVD). There are many programs who do that from 50 quids to several hundred depending on the degree of sofistication you are aiming for...

My sugestion? Buy a few dedicated magazines with attached CD's and you'll find there demos of diferent programs and tutorial's...

Almost forgot: You'll need an hefty hard drive (200mb+) to store your creations and a firewire connection to the camcorder...

Hope it's usefull...
