anyone know if its possible to stop the colour of the speed changing from white ( which I can see) to red ( which I can't) once you're over the speed limit ?

It's not possible on my Navigator IV and I suspect that's also the case on an ordinary Zumo 660.
I agree, damned annoying, but I just work on the theory that when it is red I'm over the limit. Can we ask Garmin to change the colour or the size when they do their next update 
(knowing Garmin they will change it to a clear filling so it's not readable at all
