I've done London/Rome/London in 5 days. Including one full day in Rome for a wedding.
But I cheated a bit loading the bike on the train till Nice on the way down.
But, yes without rushing, 8 days is plenty.

If nobody else has said it above, you might think about using the tunnel from Switzerland into Livigno. It's a great experience, a really old long tunnel under the mountains, one way, try to be first in the queue.
Not being glib, but I didn't notice, nor do I remember. What is the cost of the tunnel?
It's an ace tunnel. We did on a blistering hot day and it was like riding in a fridge.
Nope, nope, nope. The Gavia is a horrible pass, worth doing yes but not better than the Stelvio, nope, nope, nope.
