Why not get the lowered GS fitted with a standard seat on the high position, this will allow your legs to drop thus opening your knee joints and still keep you on a relatively low bike that will still work properly for the 'off-road' stuff that you enjoy..Simples!
I think that's my next move. I love my water cooled GS, my third GS in all, but the stretch to the ground doesn't get any easier. A lower riding chassis with the same saddle to peg set up could be spot on for me.
