The fluid reservoirs for the servos do indeed have an overflow / breather tube. I'm not sure if there's some sort of valve to stop water getting in, but like Shep said, if you push the pads back in and the reservoir is overfull, you get fluid coming out of one of the hoses on the left side of the bike.
By the way, the reservoir doesn't have to be sealed for the brakes to work - think of a normal hydraulic brake, take the lid off the master cylinder reservoir, and the brakes still work!
