I started watching this guy , attempting Colle du Sommeiller ( France ), in the snow on his 1300 GS , thinking he’s crazy .

Maybe he is , but he follows this with an awesome Italian TET series . Search his channel if you wish to see more .
Superb filming from the Australian adventurer and there must be approx 7 episodes ; Episode 7, with views over Lake Como , from his ferry crossing is so entertaining .
 
Whilst on the subject of ‘Italian TET ‘… a question
I’ve ridden several UK TET sections , some on my GSA and found some sections very challenging , but very much easier on my lighter DRZ .
From what I’ve viewed on YT , the French and Italian TET looks much more ‘doable ‘ on a GS , than our U.K. sections . Thoughts from anyone who has ridden these TETs please ?
 
I’ve ridden some of the French TET and it very much depends on which region and which time of year, e.g. farm tracks in central France are mostly flat and easy in the summer, but muddy and slippery in the winter. To the south, the more mountainous areas are a completely different proposition. My advice would be to pick an area you are interested in exploring and then email the ‘linesman’ for that region of the TET and ask about difficulty levels. Contact details are on the TET site

Most of the better known alpine gravel tracks are doable on bike bikes but would be more fun on your DRZ. I do them on my DR650 which I take down on my trailer or in my van.

On big bikes you do need to do your research beforehand as you suggest as the difficulty of tracks changes over time. Personally I would never do them on a big bike as I wouldn't enjoy it.
