Any idea how thick the brake pad on a R12GS should be to change it?
Can it get too thin to be safe or to affect the braking power?
I don't mean metal to metal of course..

Back pads until it breaks through the 'tell tale' on the inner half of the caliper. Front pads until its down to the end of the grooves.

:agree look through the rear wheel and you will see a 10mm hole in the brake pad, When you can see the disc through this hole then change pads

So if you know the pads are low and you keep an eye on the pads when the whole pops through how long before the pad hits the disk.

Just changed mine today as the back was close to breaking through said hole. When I took them off they had about 2-3mm left on each and I broke the hole with my fingers:eek
So if it looks like it's getting there, go and buy some quick

I did a 600 mile trip last year, two up with luggage an the hole was showing before I started  No problems though. (steady riding in good weather) There was a bit under 1mm left, no metal to metal.

I would say don't pannnick  , just go and get some replacements. I fitted 'Carbon Lorains' Steptoe will send you a set at a decent price 'Ferodo Diamonds' quite good I hear.
