Choosing between the GS and the GSA ? Any advice please

Panniers should not influence choice between GS or GSA.

Vario or Alloy panniers can be fitted to both GS and GSA after buying a few bits. Salesman may tell you otherwise but that is BS as bikes are fundamentally the same.

Better still buy Metal Mule panniers and carry them forwards onto future bikes.
 
Impossible to advise , owned both in various forms. Just be aware a fully fuelled GSA is a complete pig to wheel about.
 
If you only ride on tarmac, the GS is the better handling bike. It is lighter, more agile, less bulky, has a lower CoG, and the suspension more controlled for road riding.
Road riders who say otherwise are probably akin to the same twats who ride with the 3 ally boxes through central London on their daily commute to the office...
