1100s can be had relatively cheaply, reading between the lines you are on a budget like me,2k will get you a good one,it does not cost much to make it fit you.Handle bar risers 20£,takes about 1 hour to raise the seat an inch over highest standard position and costs nothing except 8 longer bolts.Various aftermarket adjustable/lower footpegs available but just get some wider motocross pegs from a breakers and make some mounts.Lots of shiny things available from Touratech but bloody expensive, buy the gearbox reinforcements or better still borrow some and copy them,I made my own steering stop protector out of a doorstop......A high front mud guard is worth having ,buy some plastic tubing from Halfords for 5£ and rerote the breathers,1 hour of welding to beef up the subframe, buy one with crashbars or get second hand for 50£.If you are riding on your own dont buy alli boxes, visit surplus shop 50£ couple of hours sewing and you will have a good set of soft luggage and if your stuff wont fit in it youve got too much stuff.Reckon less than 2.5k£s and you are a way in relative comfort on a machine that is just as capable as agsa except tank size, tenner for a couple of jerry cans sorts that out.Which ways theRSA?

".....You don't say whether you're intending riding alone....." This is important because the 800GS is not a patch on the 1200 if you want to carry a pillion. Ask my wife - it cost me a lot of money to change back!
As far as height is concerned the standard saddle on the 8OOGS is 880mm - I found the 'low saddle' at 850mm OK for me (at 6'1")
