It's really, really tough for someone to say
'This particular GPSR is the best for car or motorcycle use' anymore. 5 years ago, a question like yours would be easy to answer, because there were so few models of GPSR on the market that it was quite easy to say 'this is the best for this purpose'. Today, there are many different models on the market, and the capabilities of the various models tend to overlap each other. This means that even if a person was an absolute expert on the subject, it would be tough (and foolish) for them to try and give you a definitive answer.
I have used the following models of GPSR, in this order: SP III, SP 25xx, SP 26xx, SP 27xx. Each of these products has been (at the time of release to market) the top of the line Garmin automotive and moto GPSR. So, if you were to purchase a 2720, if nothing else, you could be reasonably assured that it is the top of the line product within the automotive and moto market segment. But, would it be the 'best' GPSR for you? That's the tough part.
Although you noted that you are not a 'techie' person, I think what you will need to do to come up with an answer that is right for you is to make a short list of the features (the competencies) you want to have in a GPSR. For example:
1) Maps built in for all of Europe, or just your own country / island?
2) Big screen (easy on eyes) or small screen (fits in pocket).
3) Runs on batteries, or is that not important.
4) TMC (traffic monitoring) or not.
5) Speed camera database or not.
6) Support for other map types (marine, topographic, aviation) or not.
I think it is safe to assume that you want it to be waterproof - so, be aware that there are lots of GPSRs out there that are not waterproof.
Some GPSRs that have multiple competencies (e.g. the 2x6 and 3x6 models) have a user interface that is a bit more complex than the GPSRs that are intended for the automotive and moto market only. Keep this in mind, since you mentioned you wanted the GPSR to be simple.
Once you have identified what features you want, you can view the different automotive products at the
Garmin website, and you will soon get a pretty good idea of what would suit you best.
