The Mecure in Albi is superb, with views over the river and breakfast on the terrace. Went there 3 years ago and was pretty reasonable! Plenty of places in the town too, and a really nice town to visit!

If you're just looking for a stopover we've stayed at the Mercure on the outskirts of Brive La Gaillarde a couple times. It's away from the road so bikes are quite safe parked up behind the hotel. Not as plush as some of the other Mercure hotels, but the food has always been brilliant and the rooms were updated in 2008. We booked it the first time but then turned up on spec on the second. After a very brief negotiation they were more than happy to heavily discount the room rate. 
Stayed here in Figeac last summer.

Great location, very efficient and biker friendly staff. The restaurant has a deck area over the river bank and can be seen on the Dining and Bars link. Parking is on the other side of the road to the hotel entrance.
