I've tried to drill out a snapped exhaust stud and the drill has snapped below the surface!! Best way forward do I take the head off and get someone to drill it out and hellicoil it or just leave it with one stud....

Not sure what metals are involved, but in the past when I have needed to remove steel from aluminium parts, I have soaked them in dilute nitric acid - renders Al passive but reacts with iron.

To remove the broken drill bit you will probably have to remove the head and take it to someone to spark erode the drill/stud out.
My R1100S has the same two stud arrangement as the 1150gs and has happily run with just one stud up until recently when I finally got round to fixing it.
Having said all this, you can often find a complete head on ebay for a reasonable price and swapping them over is not a huge job.

Edit, don't know what side or year your bike is but for example:

That's the best option IMO. I got one spark eroded, it was about £40, but I reckon a replacement head is just as cheap (providing its got 2 good studs or none obviously!) It will be ok on one stud though. I'm dismantling my 1100S to sort it out and even with no bolts and a big F**K of hammer the manifold won't come off!
