Was just about to ask how to do this as it was not obvious, but after a little more playing around, I answered my own question.

By default, my unit was showing restaurants when zooming in over a certain level. But I wanted petrol stations to be shown instead. Went through all the settings relating to map layers, but could not find a list of POIs to choose for display on map, and the online manual was no help.

By chance I tapped the top right corner of the map, and up popped a magnifying glass "Search" symbol. A list of POI categories scrolls down, and you can choose ONE at a time, or none. I believe you do need "Places along road" checked in the map layers screen.

Sometimes the category icon shows on the map marking the position, and at a more zoomed out level, they are just small blue dots that can be tapped to show the details, and the "Go" option. Useful for viewing the choice of category in relation to your own position.

You can personalise your favourites through the options screen as well. In fact there are a myriad of options available to you to personalise your Nav V.

Ah yes, I see you can check the various categories in the Personalize section, but does this automatically determine the symbols shown on the map? If not, there is not a Show personalized categories on the drop down map search box, only "Custom POIs". is that the same?

TBH I'm not certain. Like you I've had a wander around it but not had chance to connect it to the PC & read the manual yet. I put it on the bike in the garage yesterday for a broddle around & noticed that more options seemed to be available on the bike than off it.

I have to say this is why I get annoyed with the lack of a paper user guide. I like to sit down with the new toy & the user guide & go through everything step by step.

As you've already mentioned the map layers may help you determine what does/doesn't appear.
