Bike is '17 GS TE.
Touring Spain at the moment 25deg.
Stopped for a coffee, all done after half an hour, started the bike fine but it sat at 2.000rpm with an engine icon on the dash and did not respond to throttle input.
I turned the bike off and back on again and all is fine.
Maybe it was one of those days as that day the nav v started saying 'on the left' repeatedly till I took it out the cradle and manually turned it off. Put back on the bike and its it's been fine since.

Switch it off and switch it on again! The classic first step in the digital age. :D

I had that recently, kept going into limp home mode, it was the throttle senser.

Anything done to the bike, or is everything stock.

Yes, I had this too on my 2017 GSA. One fine day no throttle response, which was cured by switching on and off. A few days later the same thing. Next day it was running normally so I carefully rode into Battersea and they replaced the throttle sensor, though the chief mech would not say how common a problem this is. I had bought the BMW extended warranty about two weeks earlier.
