Having just returned from Germany back to sunny Australia about 6 hours ago, I can tell you that Gepäckbrücke is nothing more than two words which make a new one with a perfect meaning.
"Gepäck" is your baggage, "Brücke" is a bridge. So it translates to a "Baggage Bridge", which if you think of where it is and what it does, that's a dead logical description of the item.
