1st of all,welcome to Yorkshire. As Funners has already told you,folks in Yorkshire are really honest..........until it's their round.

The ride looks interesting,all nice roads,good luck with the weather. I'm up in Scotland that weekend for Thunder in the Glens,a Harley rally,so maybe next time.
If you're passing through Pateley Bridge,call in at Park Veiw Home Bakery (at the bottom of Greenhow Hill) for a pot of tea and some chocolate or cherry flapjack. It's delicious. I should know,I stuff plenty of it down.
There are loads of great roads around Linton-on-Ouse but one that springs immediately to mind is the B1257,Helmsley to Stokesley. A short but excellent ride,and then continuing through Great Ayton to Saltburn,down the coast to Whitby and back over Fylingdales Moor to York.
I can't help with any off-road stuff as I hav'nt done any yet,not sure if I could handle dragging my new 12GS out of a swamp.
BTW, Sharow Common,between RAF Dishforth and Ripon,quite popular with trials/crosser riders,is suitable for a bit of off road practice and only about 20 mins ride from L-o-Ouse. Not a vast area but some good tracks,berms,jumps etc.
