Must haves?

Got to be
-GPS (Garmin2610) + Touratech bracket and mount [actually I would possibly choose a different mounting arrangement next time]
-additional power socket
-PIAA H7 Powersport replacement bulbs for orginal lights
-Cylinder guards
-auxillary lights !! 1 x pair Hella FF50 and 1 x pair Hella Micro DE fogs + Migsel bracket
-battery charger to keep the battery charged after lights drain the power.
-screen extension [Touratech] to reduce wind buffeting on long journeys.

int the idea to ride it so I'd add petrol to the list and plenty of it enjoy

but the side panels stop all the crud that seems to collect around the back of your leggs, wierd that one
 
Fast Ways!

Fastway foot pegs. Superb bit of kit. Better for standing up and grip in the mucky stuff, better for comfort too I reckon. Spreads the weight over longer distances.

TKC's and a Fog City insert for your visor.

Waterproof gear.

I am only new to the 1200GS and the first thing I did was buy a Givi AF330 screen. I would say as many others have, that the addition of winglets (standard on the GSA) make an enormous amount of difference. I fitted mine (genuine BMW £47) last night and had a quick blast over the Snake Pass and a commute in -1 temp this morning and was amazed at just what a difference they make. I thought it would be only my lower torso that benefitted but they somehow seem to stop some of the helmet blast I was still getting. Proper visor up cruising at 90mph possible now.

Just bought a sidestand enlarger to help keep the beast upright on softer ground and my next purchase, or possibly self build, will be a brake pedal enlarger.
 
My two-penneth:

You don't need anything unless you are going to take it off road or you actually need something to resolve a genuine problem. Don't be a twat and chuck cash at Touratech bling for the sake of it...

If you are going off road, change the standard bash plate for the Touratech or large BMW one.

You might also consider Mark Hootons alternator guard as that is exposed to crap from the road.

For SatNav - a Zumo660 is highly recommended. The mount it comes with is fine. The Touratech lockable one is v good for security (i.e. when re-fuelling) and off road vibration damping also clamping security.

I binned my rear mudguard as soon as I got home with the bike as I don't think it is needed. Get's trashed off road anyway.

Must haves

Decent head lights so you can actually SEE in the dark.
 
The biggest improvement you can make is to remove some of the crap and lighten the bike instead of adding weight. :D
