If I simply enter Basle and Zermatt as waypoints, with Switzerland as an avoidance for Toll Stickers, will the XT route me off the motorways or literally try to avoid Switzerland altogether?

The Zumo will avoid tolls by country that you set when it calculates the route after you send it to the device. This is in the settings - you’ve probably found this already 
try splitting the route into segments you ungrateful turd

You can set the device - and other devices - to avoid (in a bespoke manner) specific roads, which you chose. You are even able to set it to avoid specific areas. Play around and report back.... you are doing OK so far and it's a good way to learn.
