Excuse me, but won't "increased flywheel mass" make it slower to pick up from low revs...or I am I just thinking of the laws of physics?

A little bit yeah, but on a big, lumpy, powerfull twin you prob won't notice toooooo much difference. What it does do though is provide more momentum to the engine; it sort of stores some of the energy and keeps things spinning round better which equals a bit smoother/ more tractable at lower revs.
