I've recently picked up a 1991 R100GS (see pic in signature)
Shes awesome, pulls like a train and can be fixed with a hammer. Bomb-proof

Saying that, the ULTIMATE airhead would have to be the R90S.

As Thunder says, your choice begins with either the mono G/S or the paralever GS.
Then you have to decide if you want softer 800 or the not so sweet 1000 engine.
It's my opinion that the 1000 puts too much stress on the drive train and that the 800 is the preferred bike. Others will differ.
The best mods are determined by what you want to do with the bike. Do you want to do a RTW, offroad, tour or a mix?

Piece-of-string question, really. Depends on your budget and what you want to do with it.
Are you specifically after a GS or g/s airhead with off-road intentions?
If not, and you are new to the world of airheads (and they will feel very different to your 1150 adv
) , may I suggest looking at one of the road models first? Rob, Proff and others know far, far more than I do about such bikes 
and could suggest which ones. However, with the exception of the R90S, I do know that most of the road bikes do not carry the hefty price premium that some of the GS / g/s model airheads do. If you are just dipping your toe into the world of airheads that might be a more cost-effective route to go first. I love my 80g/s but it was a relatively expensive choice for such an old bit of kit and I do wonder whether a road bike could have been bought in better nick for less dosh. Just a thought.
If you are set on getting an airhead for off-road stuff, everyone will sing the praises of their bikes. For an off-road plodder like me the monolever R80g/s is a top little bike. Like the posts above, upgrades are available for just about everything on the bike.

IMHO, as a Road Bike and a "traditional" BMW Airhead, a R80 mono, mid 80s is a really nice Bike. (to start with or to have as your only Bike)
There are a few around that have really been looked after and can be picked up at a good price, (but buy the best that you can afford).
