Hi Miff, simplicity, lower service costs, and I don't like the idea of anything failing and getting between me and stopping. Had experience of this before - they're fine all the while they work, but when they don't...
The 1200 is a heavy bike to stop in a hurry without the servo. Admittedly mine was an ABS model, but I don't see that it would make a difference to the weight. I rode from San Francisco to Portland without the servo (after the switch on the lever got stuck) and didn't enjoy the experience one bit.
The braking on a non servo bike is not the same as the braking on a servo bike that isn't working. I think that's the main reason for not having it. Personally I would avoid servo like the plague.

having been sat at 2400m on top of an alpine pass together with all the holiday baggage, the missus and a servo that did'nt work I would not entertain it again - no, they do not go wrong often, but try decending on an overloaded GS with only residue braking and hairpins every minute or so
