Start with the standard 1200 seat on the low position, or a low 1200 seat. They're cheaper and easier to get, and you can get them rebuilt of they don't suit.
Personally, 15000 miles on the low 1200 seat, I only ever had issues when I did over 300miles in any one day, and an Airhawk sorted that for a hell of a sight less than a seat rebuild.
Get a low seat off ebay or ebay de.
It's the one without the heigth ajusters.
I still struggle a bit with my GSA even with the low seat.
You may be able to swich to GS shocks. I am not sure how this will work out.
I have a GS and A GSA.
I am going to switch the shocks sometime for the craic and see how it is.
It's a pain for everyday riding if the bike is too tall for the inside leg measurement.
More seriously, Daytona do boots with a raised insole, the M Star GTX. They'll give you another inch which, in conjunction with an OE R1200GS lowered seat might get you close to the 50mm you need.

You have to be joking lowing the bike 50mm. I'm 5'8 and I have the seat on it's highest setting. I take the bike on all the tracks and trails HP2's go.
How about learn how to ride the bike by taking a BMW ride class. The money you will save by not lowering the bike you can use learning how to ride it.
You do not need both feet on the ground just one foot will do. When you stop try sliding off the bike slightly to the left or right so you have one foot on the ground the bike is well balanced.
