But if the sport suspension is higher and you're ordering a low chassis model, wont that work out the same height as the standard model?

No the dynamic suspension is an added £755 which leaves bike at standard height. But you can then add the sports suspension package which has stiffer springs and 20mm more travel for an added £290 on top of the ESA suspension!

+1 for lowered suspension. I have a GSA LC with it. Would rather have comfort of being able to put 2 feet down. I was told that handling was actually better due to a lower centre of gravity, but have nothing to compare it to. IMO last thing you want is a bike you're daunted by. I'm not expecting any problems with re-sale as the demand is out there and there are fewer of them.
