You have oceans of choice in 6 days

I have fairly often done 6 days in France - in and out of Roscoff in September
Off boat and through passport at 7.30

Anywhere in Massif or Ardeche or Tarn or Dorgogne area is perfect and doable, in that time
Plenty of variations you could do - long or shorter versions

Longer Version could be something:

Day 1 @ Limoges
Day 2 & 3 stay somewhere roughly around Valence like Crest or anywhere in the Vercors
Day 4 @ Florac or Rodez area
Day 5 La Rochelle
Day 6 Back on boat

But multiple shorter versions could be done.

Anywhere South of Limoges and Lyon and East of Limoges and Toulouse you cannot go wrong with
 
My suggestion for day 4 would be to go east from la chatre to saint amand montrand and from there go north to sancerre, picking up your original route at gien. You will get better roads and views going that way. Sancerre is a great place to stop for a meal en route too. Try to avoid the major roads as they tend to be straight and featureless. I live near Bourges so these are my local roads.
