My GS will probably need it's 6000ml service while we're on our trip later this month as it's too far short of the mileage to make it worth doing beforehand. Plus my usual dealership normally has a long wait for workshop space ( 6 weeks )
So ...... my question is how easy is it to book on the fly over in Europe ?

There’s usually a bit of a wait here too from my experience, you’d probably need to decide where you’ll get it done and see if they have a space for you to book in advance same as blighty

where are you going? The number of Motorrad dealers varies a lot depending on the country. Do you have somewhere in mind as a base for a couple of days so you can take a day from riding or are your destinations flexible?

You’d need to book ahead but easily done . Just find a dealer and email them using Google Translate.
Had my KTM1290 serviced in Boulogne-sur-Mer a few years back.
Had my Voge 900 serviced near St Brieuc in April and will be getting Vstrom serviced there or in Rennes in November .

If booked in advance it is doable...I've had a service in Lleida and tyres in Leon and Andorra.

they should speak English as a courtesy.

My bike is serviced before each trip regardless of mileage . Current bike has been serviced 3 times in 9000 miles as I like a bike with fresh fluids and tyres on each trip August 24 bike , not a Bm .

No different to over here really. I had to make arrangements for a pal of mine with very short notice (10 days). Loads of emails to dealers on our loose route. Ended up in Munich, as that was the only dealer that could accommodate the service. My advice would be to get it done here if possible, or do it yourself before you go. A service a couple of thousand miles early on a bike worth a few grand is pretty small change in the grand scheme of things 😀

August is mainly vacancy time = less people working AND usually you need to book your bile maintenance more than 4 weeks before.
As already said the best is to do your bike maintenance BEFORE your trip even if miles limit is not get
