Is there a technique to remove the lid from the clutch master cylinder on a 07 1200GS? Or does it require another special tool!?

Of course there is a special tool but if you look it is possible to remove it.

Though why do you want to remove it? Fluid should be good for a long long time.

There are a couple of clips under the lid which need to be squeezed in.

Just watch out, most, if not all, 1200 clutch lines are filled with oil and not clutch fluid - a dose of DOT 4 could well kill the seals, so you probably don't need to take the lid off unless there's a problem or the clutch is slipping.
