I have just gone & done the same as u I loved the GS when it was not on the back of a recovery truck my first bike was replaced by BMW after A NIGHTMARE of ownership but after the replacement bike covered 6000 miles & started to jump out of gear that was my lot with BMW

not sure about doing track days and the nurburgring on the adventure,
could be handy on the odd grass experience though
